Kitchen Magic: Absolutely Addictive Almond Butter Bites

As an on-the-go yoga instructor, I've found that it's imperative to keep easy, grab & go nourishment on hand to sustain me between classes. Teaching at multiple studios all over Chicago can sometimes offer only a few minutes at home to grab a healthy snack. That's why my favorite items are not only yummy, but also include some healthy fats to keep my energy up on slightly less fuel. Yes, a good meal is preferred, but in a pinch nuts, seeds, and oils are great stomach-filling substitutes. And when all of these qualities combine to make something that also tastes like a dessert, you'll find me indulging at every opportunity I can get.

These gluten-free, vegan and remarkably satisfying energy bites fit the bill to a T...I dare you not to get addicted!

1 c gluten-free oatmeal
1/2 c ground flax seed
1/2 c unsweetened shredded coconut
3/4 c maple syrup
1/4 c almond butter
2 tbsp coconut oil
1 tbsp chia seeds
1 tbsp pure vanilla extract
2 handfuls cacao nibs
1 pinch Himalayan sea salt

Add all ingredients together into one large mixing bowl.
[For best results, mix together dry ingredient before adding in wet.]
Stir until combined.
Form into bite-sized balls either by hand rolling or cookie scoop.
Place on flat serving platter and freeze for at least 10-15 minutes.
Make several trips to the freezer to devour "just one more." ;)
