Quick Bite: Fried Peanut Butter/Banana Sandwich

Elvis ate them by the dozen, but I grew up eating fried peanut butter sandwiches minus the banana. My mother served them topped with syrup & with my favorite Pluto fork on the side. As an adult, I'll make them on occasion, with or without a banana depending on how I'm feeling. So here it is, a quick & easy breakfast fit for The King:

Ingredients:

Earth Balance buttery spread Mara Natha peanut butter [or your spread of choice] whole grain vegan bread 1 organic banana, sliced a dash of cinnamon a drizzle of maple syrup

Spread peanut butter between two slices of bread & distribute banana slices inside to your heart's content:

On the outer sides of your sandwich, spread a generous helping of Earth Balance butter. Place sandwich into a skillet over medium heat & brown the bread as if making a grilled cheese. Transfer sandwich over to a plate & top with more banana slices,  a dash of cinnamon, & syrup to taste. Enjoy!
