Today is quite a lazy Monday...well sort of. I'm doing plenty of research, plenty of writing...just not much cooking or showering. So when it came time to make a mid-afternoon snack, I broke out the Vitamix to get quickly back to work.
Who needs bread when you can blend yourself a PBJ smoothie? [+ greens for that extra energy boost]
Confession: I set out trying to make this smoothie as simple and natural as possible with just fruit, veggies, & peanut butter, but found my inner 5-year-old wasn't quite satisfied without a small spoonful of jelly [naturally sweetened, of course].
1 banana, frozen 1 handful spinach 1/2 c. strawberries, fresh or frozen 1 c So Delicious coconut milk 2 tbsp all-natural, unsalted peanut butter optional: 1 tbsp strawberry jam for your inner child
Place all ingredients in blender & process until smooth. Garnish glass with a swirl of peanut butter & top it all off with a dollop of jelly. Enjoy.
